An easy cast iron skillet preparation make for a healthy breakfast or lunch.

Yields4 Servings

 4 Flour Tortillas 8”
 1 cup Cottage Cheese
 4 tbsp Cottage Gourmet Jam Session Strawberry/Rhubarb Jam
 6 Large fresh strawberries, thinly sliced (2 are for garnish)
 4 tbsp Plain Greek yogurt
 4 Wooden toothpicks

Lay tortillas on a cutting board and spread a 1/4 cup of cottage cheese in the centre of each tortilla.

Add 1 sliced strawberry on top of cottage cheese. Spread 1 tbsp of Cottage Gourmet Jam Session Strawberry/Rhubarb Jam across the fresh berries.

Now fold each edge towards the centre creating a square packet. Use the toothpick to hold together. The packets should sealed and you should not be able to see filling.

Set a skillet on medium/low flame or set an electric frying pan/griddle on medium heat with some butter.

Place each packet into pan and cook until golden brown. Gently flip to other side and continue cooking.
Once cooked, remove tooth pick, plate and top with a tbsp of greek yogurt and some strawberry slices. Serves 4 or 2 hungry people!
